Pro|te|i|na|se [↑ -ase], die; -e, -n; Syn.: Peptidylpeptid-Hydrolase, (veraltet:) Endopeptidase: Sammelbez. für Peptid-Hydrolasen (↑ Proteasen), die in Proteinen Peptidbindungen im Inneren der Ketten spalten. Unterteilt werden die P. nach Art der reaktiven Gruppen in ihren aktiven Zentren, z. B. als (durch Serpine hemmbare) Serin-Proteinasen (Chymotrypsin, Trypsin, Elastase, Plasmin, Thrombin), Cystein-Proteinasen (Papain, Bromelain), Aspartat-Proteinasen (Pepsin, Renin, Rennin) u. Metall-Proteinasen (Kollagenase, Thermolysin).
